天かすではありません。牛の腸を油でじっくりと時間をかけて揚げたもの。実は意外とヘルシーかつコラーゲン豊富。ただ、仕入れ価格が100gあたり500円以上と、和牛顔負けの高級食材なんです。
Kasu Kujo Negi Udon. Udon noodles are topped with kujo onion, a traditional Kyoto vegetable, and deep-fried beef intestines, an Osaka specialty. Osaka specialty "Kasu" is a high-grade ingredient made from fried offal, not tempura bits. It also contains Kyoto specialty "Kujo Negi". This is our original udon where you can enjoy two specialties at once.
Kyoto Kujo Negi Udon. Udon noodles are topped with a generous amount of kujo green onion a traditional Kyoto vegetable.
Kasu Udon. Udon noodles in a light-flavored dashi soup, topped with deep-fried beef intestines called "kasu", an Osaka specialty.
