A day built around one meal
Okay, y'all know I'm always on the hunt for the next culinary adventure, and this weekend's trip to Minneapolis did NOT disappoint! I was actually in town visiting my bestie from college (hi, Sarah!), and after a morning spent wandering through the Mill Ruins Park, soaking up the history and snapping pics of the Mississippi, we were STARVING. Sarah remembered a foodie friend mentioning Pizzeria Lola, and since pizza is basically my love language, we headed straight there.

First of all, the vibe is just perfect. Super chill, a little quirky, and totally inviting. We snagged a spot on the patio (because sunshine!), and I immediately started drooling over the menu. The cocktail list alone is worth the trip. I went with the Paloma ($13.00) – mezcal, lime, grapefruit crema, and a gochugaru salt rim? YES, PLEASE! Sarah opted for the Jasmine ($13.00) – gin, curaçao, lemon, aperitivo – and was equally obsessed.
But let's get to the main event: the pizza! Lola's is known for its wood-fired pies with unique flavor combinations, and they definitely deliver. We decided to share a couple to maximize our tasting experience. We went for the classic Margherita and the Korean BBQ. That Korean BBQ pizza was unique, delicious, and memorable! The crust was perfectly crispy and chewy, and the toppings were so flavorful.
I should mention, as we were planning out the rest of the day, we realized that Minneapolis is such a cool city for art lovers. After polishing off the last slice, we considered swinging by the Minneapolis Sculpture Garden to check out the iconic Spoonbridge and Cherry sculpture. But before that, Sarah took me to the Peace (Rock) Garden, where we built a little rock tower for good luck. It's all about balance, right?
Back to the pizza! Other menu highlights include the Old Fashioned cocktail ($14.00), the Kingston Negroni cocktail ($14.00), and the Surly Grapefruit Supreme in bottles/cans ($8.00). For those skipping alcohol, they also have some zero-proof options like the Per Se ($10.00).
