A day built around one meal

Belize has a way of slowing you down, drawing you into its rhythm. I'd been spending a few days in San Pedro, exploring the Corozal District, primarily to check out the coastal views and soak up the sun. After a morning spent meandering around Point Fermin Park, enjoying the salty air and the expansive ocean panoramas, my stomach started rumbling. A local I'd chatted with earlier had casually mentioned Larimar, suggesting it was a good spot to settle in and recharge. I was glad I listened.

Stepping into Larimar, the atmosphere felt just right—a comfortable blend of breezy island charm and understated elegance. It’s the kind of place where you can unwind after a long walk, but still feel like you're in for a proper meal. The menu, like the restaurant’s namesake gem, felt thoughtfully curated, promising a taste of the Caribbean Sea and beyond.

I started with a couple of their unique cocktails, eager to see how they played with local ingredients. The Spiced Hibiscus Paloma ($10 USD) was a standout, a vibrant mix of tequila, mezcal, grapefruit, and an intriguing aniseed cordial that gave it a lovely depth without being overly sweet. Later, I tried the Sea Foam Soursop ($11 USD), a creamy, tropical concoction of soursop pulp, coconut cream, white rum, and lime – like a beach vacation in a glass. Both drinks were perfectly balanced, a good sign of what was to come from the kitchen.

For my meal, it was hard to choose. I’m a fan of a good chowder, and their Fisherman's Chowder ($28.00) didn’t disappoint. It arrived brimming with an assortment of in-season seafood, chayote, potatoes, and peppers, all swimming in a rich white wine and coconut cream broth. It was hearty, flavorful, and made even better with the toasted garlic herb baguette for dipping. It spoke of comfort and the bounty of the nearby waters.

I also had my eye on the fish. The Crispy Skin Snapper ($29.00) caught my attention, served with a roasted poblano cream sauce, coconut white rice, and sautéed market vegetables. The snapper's skin was indeed perfectly crispy, a testament to good technique, and the poblano cream added a gentle, smoky spice that complemented the delicate fish beautifully. Another dish that impressed was the Pepitas Crusted Tuna ($34.00). The tuna was seared just right, still pink in the middle, with a delightful crunch from the pepita crust. It was paired with a curry butternut squash purée and a hibiscus gastrique, which offered a smart balance of savory, sweet, and tangy notes. It’s these thoughtful touches that really elevate a dish from good to memorable.

For those who prefer a little more heft, or are sharing, their Surf & Turf ($49.00) looked substantial, featuring a charbroiled filet mignon alongside shrimp and a creamy chorizo mac & cheese. It’s a classic pairing, executed with a distinctly Belizean flair.

After such a satisfying meal, the idea of a leisurely stroll was appealing. I’d noticed the distinctive structure of the Point Fermin Lighthouse earlier, and the path leading towards Angels Gate Park, both within easy reach, promised more refreshing ocean views. Larimar, with its welcoming ambiance and carefully prepared food, felt like a perfect anchor for a day spent exploring this corner of Belize.

Larimar isn’t about chasing trends; it’s about good ingredients, solid execution, and a menu that genuinely satisfies. If you find yourself in San Pedro, seeking a meal that delivers on both flavor and comfort, this is a spot worth seeking out. It's a reminder that sometimes, the best tips come from the locals, and the best meals are found where care and craft meet the bounty of the sea.
