A day built around one meal
Okay, friends, you know I love a good spontaneous adventure! I recently drove up to Seattle for a quick weekend road trip to visit my college roommate. Of course, I had to squeeze in some exploring. After a refreshing morning hike through Discovery Park, soaking in those stunning Puget Sound views, my stomach started rumbling. I was craving something bold, something flavorful, and something...Tex-Mex! That's when I stumbled upon Jackalope Tex Mex & Cantina, and let me tell you, it was a game-changer.
I'd heard whispers about this spot from a follower, so I figured, why not? And boy, am I glad I listened! This place is more than just your average Tex-Mex joint. It's got a cool, laid-back vibe, a great cocktail list, and a menu packed with seriously tempting options.
First Impressions
The atmosphere was buzzing with happy chatter, and the staff were super friendly. After a quick scan of the menu, my eyes landed on the Jack's BBQ Smoked Brisket Birria ($27). Slow-braised brisket with chiles, spices, beef broth, served with all the fixings? Yes, please! But, I couldn't stop there. I also had to try the Tacos de Papa ($17.50) – crispy corn tortillas stuffed with mashed potatoes, corn, poblano rajas, avocado, and cotija. It was a vegetarian dream!
A Tex-Mex Fiesta in My Mouth
Let's just say, both dishes exceeded expectations. The brisket birria was melt-in-your-mouth tender, with a rich, smoky flavor that lingered perfectly. The tacos de papa were crispy, creamy, and packed with flavor. I also washed it all down with their Jardinero featured cocktail ($15) - the Condesa Prickly Pear & Orange Blossom Gin, Aperol, Heirloom Genepy, St. Germain & Rosé blended well and wasn't too sweet!
If you're feeling fancy, I also had my eye on the Royal Ranch NY Strip Steak Asada ($37) or the Smoked Birria Marinated Ribeye ($39). Next time, for sure! And, to finish the meal off, I’d opt for a Don Julio Tequila Flight ($25) featuring their Blanco, Reposado, and Anejo to sample a little bit of everything!
Beyond the Food
After my Tex-Mex feast, I strolled around some more. It was a quick drive to Olympic Sculpture Park to wander through some amazing art installations. I also thought about heading up to Kerry Park for those iconic Seattle skyline views, but decided to save that for another trip.
Final Verdict
Jackalope Tex Mex & Cantina is a must-visit if you're in the mood for delicious, innovative Tex-Mex in Seattle. It's the perfect spot to refuel after a day of exploring the city.
